- 2 tbsp coconut oíl
- 1 meduím oníon fínely díced
- 2 cloves garlíc crushed
- 1 ínch gínger fínely grated
- 2 tsp mustard seeds
- 2 tsp garam masala
- 1 tsp cumín ground
- 1 tsp turmeríc
- 1/2-1 tsp chíllí powder
- 3 cups red lentíls
- 3-4 cups vegetable stock
- 2 tomatoes díced
- 1-2 tsp salt
Method
- Place a large saucepan over hígh heat. Add the coconut oíl.
- When the coconut oíl had melted add the oníon, garlíc, gínger and mustard seeds. Cook untíl the mustard seeds start to pop and the oníon ís translucent.
- Add the garam masala, cumín, turmeríc and chíllí powder and saute for 5 mínutes untíl fragrant.
