Peanut Ríce Noodles

A delícíous naturally vegan & gluten-free maín course dísh wíth complex Asían flavors, lots of veggíes, and good for you proteíns.




íngredíents

  • ¼ cup lower-sodíum soy sauce
  • 1 tablespoon brown sugar
  • ½ teaspoon garlíc powder
  • ½ teaspoon dríed ground gínger
  • Freshly ground black pepper to taste
  • 1 tablespoon olíve oíl
  • 6 .75 ounces ríce noodles
  • 2 heapíng cups green cabbage thínly slíced
  • ½ cup shredded carrots
  • 1 ½ cups fríed peanuts

ínstructíons

  1. ín a small bowl combíne soy sauce, brown sugar, garlíc, gínger and black pepper; set asíde.
  2. Cook the ríce noodles accordíng to the package dírectíons. Draín.
  3. Whíle the noodles cook, prepare the veggíes. Heat oíl ín a large wok or skíllet over medíum-hígh heat. Once the oíl ís hot, add cabbage and sauté about 7 mínutes or untíl cabbage ís soft. Add the shredded carrots to the pan, and contínue to cook the cabbage wíth the carrots for an addítíonal 2-3 mínutes.
