Peach Blueberry Pie

Peach Blueberry Pie-homemade buttery pie crust filled with creamy vanilla custard, fresh blueberries and sweet and juicy peaches, topped with whipped cream is perfect summer treat.Peach Blueberry Pie is delicious dessert for summer. I’s made with seasonal fresh fruits, homemade pie crust and irresistible vanilla custard filling. Vanilla custard filling loaded with fresh fruits tastes like classic Clafoutis.
This time for my Impossible Peach Blueberry Pie, I used combo of vanilla custard, peaches and blueberries, but I added homemade pie crust as a base for delicious filling, too.Filling is simple mixture of eggs, sugar, flour, milk and vanilla. Before you pour the filling in the crust you should arrange sliced peaches and fresh blueberries. As this is summer treat it should be loaded with fresh fruits, right?! It’s so refreshing and very tasty.




Ingredients
Pie crust:

  • ½ cup cold unsalted butter cut in small cubes
  • 1 1/3 cups all-purpose flour
  • ¼ teaspoon salt
  • 2 teaspoons sugar

Filling:

  • 3-4 medium peaches
  • ¾ cup+ 2 Tablespoons whole milk
  • 2.5 tablespoons unsalted butter-melted and slightly cooled
  • 1 ¼ cups fresh blueberries
  • 3 eggs
  • ½ cup all-purpose flour
  • ½ cup sugar
  • 1 ½ teaspoons vanilla
  • 2 Tablespoons sanding sugar
  • Whipped cream or vanilla ice cream


Instructions

  1. Get started the crust, in food mainframe push flour with sugar and salt, then mix cubed chilled butter and push until it resembles coarse range. If you don’t have the food mainframe use blender or fork.
  2. Mix 2 tablespoons ice water into the mixture and push. If obligatory, mix (one by one) 2 more spoons ice water and push. The mixture should hold joinly when squeezed but do not overmix, it should look weak. Form  the dough into a disc and wrap, put the fridge at least 1 hour (you can store it overnight in the fridge).
  3. Dust the work surface with flour and roll out the dough to make 13 inches circle, remove it in 10 inches pie dish, fold the edges and hitch with your finger. put the fridge while prepare the filling.
  4. To make the filling, mix eggs, milk, flour sugar, melted butter and vanilla together. The mixture will be very slim.
  5. carve peaches in half, transfer the stone and carve each half in thin slices. Tenderly transfer sliced peach half and place in pie crust (watch to carve maintain the shape of peach halves) Place half of one peach in the midst of the pie crust and remaining 5 or 6 carve halves of peaches arrange around the midst.
  6. Pit half of the filing mixture tenderly around the peaches. Scatter half of the blueberries among the peaches. Pit remaining filling and to with remaining blueberries.
  7. Spray with sanding sugar on top.
  8. Bake until 40 minutes at 350 F or until it’s set, but still just slightly jiggly. It will completely as it cools.
